Cream of Rice Chocolate Chip Cookies

You will need:
  • 50g Cream of Rice
  • 20g corn starch
  • 16g vanilla casein protein
  • 140g mashed sweet potatoes (OR pumpkin purée)
  • 50g egg whites
  • 40g mini chocolate chips
  • 2ml vanilla extract
  • ½ tsp Splenda or sweetener of your choice


  1. Preheat oven to 350F
  2. Mix dry ingredients together in a bowl
  3. Stir in egg whites, sweet potato(/pumpkin purée), vanilla extract and chocolate chips. Mix until dough forms
  4. Shape dough into small balls
  5. Spray baking sheet with cooking oil and lightly press cookies into shape with wet fingers (cookies will not rise in the oven)
  6. Bake for 6-7 minutes until golden brown
